A St. Patrick’s Day Treat Worth Celebrating
If you’ve spent any time around the Mobile Market, you may have seen Phyllis, one of our most dedicated and joyful shoppers. At 97 years old, she has been visiting the market for five years, always arriving with a bright smile.
When we asked Phyllis what she’s most excited to see on the market each week, she didn’t hesitate: “Eggs!”
Why eggs? Because they’re the heart of her favorite recipe: pistachio bread, a soft, festive green loaf that’s especially perfect as St. Patrick’s Day approaches. Each batch takes five eggs, and Phyllis never bakes just for herself. She loves sharing her breads and sweet treats with friends at the morning coffee club at Pioneer Manor.
During our conversation, several residents walking by stopped just to compliment her baking—proof that her treats are not only appreciated, but beloved. Baking is a creative outlet for Phyllis, giving her a way to express herself, stay active, and bring joy to the people around her.
Getting to the grocery store can be a bit of an event—Pioneer Manor offers a shuttle twice a month, since many residents no longer drive. But that’s why the Mobile Market has become a valuable resource. The market is set up right inside her building, so transportation is never an issue. She can shop easily, safely, and independently, with everything she needs just steps from her door.
This St. Patrick’s Day, we’re celebrating Phyllis and the joy she spreads through something as simple—and heartwarming—as home‑baked bread.

Ingredients
- 1 box yellow cake mix
- 2 boxes instant pistachio pudding mix
- ½ cup water
- ½ cup oil
- ½ cup milk
- 5 eggs
Instructions
- Preheat your oven to 350°F and grease 8×4" loaf pans.
- In a stand mixer or mixing bowl, combine the cake mix, pudding mixes, water, oil, milk, and eggs.
- Fill loaf pan ¾ full. There will be extra batter that can be baked in a different container.
- Bake 60 minutes or until toothpick test comes out clean.
