Smoothies, Fruit or Vegetable

SmoothiesSmoothies are easy to make and fun to serve for a breakfast or snack. Create your own combinations or follow one of the recipes below.

STRAWBERRY-BANANA SMOOTHIES

1-2 bananas
1-2 cups strawberries (fresh or frozen)
1-2 cups vanilla or strawberry yogurt
½-1 cup apple juice

GREEN SMOOTHIES

1-2 bananas
1 cup fresh spinach leaves
1-2 cups vanilla yogurt
½-1 cup apple juice

Directions

Combine all ingredients in a blender, cover, and process until smooth.  If mixture is too thin, add more fruit. If it’s too thick, add more juice.

VARIATIONS:

Add or substitute other fruits: blueberries, raspberries, cantaloupe, kiwi, watermelon, peaches…

Omit the yogurt if desired, or substitute soft tofu for a dairy-free smoothie.

Use any type of juice, milk, or soy milk.

Freeze smoothie mixture in popsicle molds for a frozen treat.
